#1 Preheat oven at 350ºF. Cut top of each pepper off and set aside. Scrape insides clean and discard seeds. Using a sharp knife, carve Jack-O-Lantern faces into each pepper #2 Bring a pot of water to boil over high heat, add salt and cook pasta until al dente. Drain and transfer pasta to a bowl. Toss with olive oil and add tomato sauce and cilantro until coated #3 Pour remaining sauce into a shallow oven safe dish. Stuff peppers with pasta mix, top with mozzarella and place the pepper lids on top. Place peppers in the dish and bake for 20 minutes, or until peppers start to wrinkle. Remove from oven and serve!
