Directions

  1. Day Before (Pulled Pork):
  2. Trim excess fat leaving 1/4 inch on fat cap. Pat dry, coat with mustard, then liberally cover with combined rub ingredients.
  3. Preheat smoker to 235°F. Place pork fat side up, don't peek for 2 hours. Spritz with apple juice every hour after that.
  4. At 160°F internal temp (around 4-5 hours), double wrap tightly in foil fat side down. Return to smoker.
  5. Continue cooking until internal temp hits 200-205°F (7-8 hours total) and meat pulls easily.
  6. Keep wrapped, let rest 30-45 minutes, then place in towel-packed cooler overnight. The pork will stay perfectly hot and tender until game day.
  7. Game Day (Assembly):
  8. Pull it apart by hand or with claws. It'll still be warm and ready to go.
  9. Air fry McCain Quick Cook fries according to package directions until super golden and crispy.
  10. Transfer hot fries to a large cast iron skillet. Top with nacho cheese sauce and pulled pork. The heat will melt everything together.
  11. Arrange all your toppings in bowls on the counter. Let everyone build their loaded fries however they want.
  12. Everyone grabs a plate, loads up, and gets back to the game.

Ingredients

  • For the Pulled Pork (Make Day Before):
  • 8-10 lb pork shoulder butt
  • 2 tbsp yellow mustard
  • 1 cup apple juice (for spritzing)
  • Texas Style Rub:
  • 1/2 cup kosher salt
  • 1/2 cup ground black pepper
  • 1/3 cup paprika
  • 2 tbsp granulated garlic
  • 2 tbsp granulated onion
  • 2 tbsp cayenne pepper (omit if you don't want spicy)
  • 1 tbsp celery salt (optional)
  • For the Loaded Fries:
  • 1 bag McCain Quick Cook fries
  • 2 cups nacho cheese sauce (warmed)
  • 3-4 cups pulled pork (from above or store-bought)
  • Go-To Toppings:
  • 1 can black beans, drained and warmed
  • 1 white onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup pickled jalapeños
  • 1/2 cup BBQ sauce
  • 4 green onions, sliced
